On a recent visit, I had the privilege of attending their sunset farm-to-table event, a five-course culinary journey featuring vegetables and fruits harvested right from the backyard of the restaurant. What makes this experience truly exceptional is Jaybirds' commitment to sustainability, with a greenhouse farm that recycles old bath tubs and water tanks to create innovative vegetable beds. The Garden's Greeting
As I arrived at Jaybirds, the lush, well-maintained gardens greeted me with a delightful display of vibrant flowers and palms. The evening began with a refreshing welcome drink crafted from our top bartender - a perfect way to set the tone for the evening.
Then we were treated to a short tour of Jaybirds' innovative greenhouse farm. What struck me the most was their commitment to sustainability. They repurpose old bath tubs and water tanks as vegetable beds, demonstrating a clever and eco-conscious approach to farming. The greenhouse itself is designed to minimize environmental impact, using natural ventilation and rainwater harvesting.
A Symphony of Freshness
The first course, freshly made soup and zuchinni chips. Then a 7 layered Salad! A medley of greens plucked minutes before from the backyard garden. Crisp, organic lettuce leaves were adorned with Cherry tomatoes, sweet/bell Peppers, fragrant herbs, all drizzled with a mango Pineapple vinaigrette. The taste was a testament to the freshness of the ingredients and the care that goes into their cultivation.
Sowing Sustainability From Farm-to-Fork
The different courses showcased the versatility of the garden's produce. A velvety pumpkin soup with a hint of nutmeg, followed by a 7 layered medley with a choice of local fresh fish or shrimp, truly embodied the farm-to-table ethos. The flavors were sublime, and the fact that most of the vegetables came from just a few steps away made it all the more special.
